Breakfast in bed for all

This particular Mother’s Day feels especially exciting to me as it’s my first ever Mother’s Day as a mom to my baby Leo. I’m reflecting on the myriad ways we can take a brief pause and choose caregiving for ourselves and those we love–even if just for a few hours.

INGREDIENTS

1/4 cup hemp hearts
1/2 cup sunflower seeds
1/2  cup pumpkin seeds
1 cup pistachios
1 cup chopped almonds
1/2 cup black sesame seeds
1 cup unsweetened  coconut flakes 
1/4 cup flax seeds
1/4 cup  chia seeds
1/2 cup almond butter 
3 cups whole rolled oats
1/2 cup maple syrup 
1/2 cup olive oil
1/2 tsp ground cinnamon
1 tablespoon vanilla extract 
1 teaspoon flaky sea salt

 
INSTRUCTIONS
 
1. Preheat oven to 325 degrees F.
 
2. Add all of the dry ingredients: oats, seeds, nuts, coconut flakes, salt and cinnamon to a large bowl. Mix well. 
 
3. Add the wet ingredients: maple syrup, almond butter, olive oil and vanilla extract in a smaller bowl. Mix well until the dry ingredients are moistened.
 
4. Once your wet ingredients are mixed up and smooth, pour them into the dry ingredients and mix well. Evenly spread the mixture all over the prepared baking sheet. Bake the granola for 30 to 40 minutes, stirring every 10 to 15 minutes, until toasted and golden brown. Let the granola cool completely and store in airtight container, at room temperature, for up to 3 weeks.
